Whole Wheat Greek Yogurt Banana Bread
Yield: makes 4 mini loaves or 1 large loaf

Ingredients:

- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1/2 teaspoon ground cinnamon (for warmth and aroma)
- 1/8 teaspoon ground nutmeg (a hint of spice)
- 2 large eggs, lightly beaten
- 4 very ripe bananas, thoroughly mashed (the riper, the sweeter!)
- 3/4 cup brown sugar (adds moisture and a caramel note)
- 1 teaspoon pure vanilla extract
- 1/2 cup lowfat vanilla Greek yogurt (for moisture and tang)
- 1/2 cup neutral oil (such as canola or vegetable oil)
Directions:
- Preheat your oven to a cozy 350 degrees F (175 degrees C). Prepare your loaf pans by lightly greasing them. I opted for 4 mini loaf pans, which are perfect for goodie bags, but you can absolutely make one standard large loaf instead.
- In a spacious large bowl, whisk together the dry ingredients: flour, baking powder, baking soda, salt, cinnamon, and nutmeg. Ensure they are well combined.
- In a separate medium bowl, combine the wet ingredients: the beaten eggs, mashed bananas, brown sugar, vanilla extract, Greek yogurt, and oil. Mix these until just blended.
- Gently pour the wet mixture into the dry mixture. Mix only until just combined. Be careful not to overmix, as this can lead to a tough banana bread. A few lumps are perfectly fine!
- Divide the batter evenly among your mini loaf pans, filling each approximately halfway. If using a large loaf pan, pour all the batter in.
- Bake for 27-30 minutes for mini loaves, or about 55-65 minutes for a large loaf, or until a wooden toothpick inserted into the center comes out clean. The loaves should be golden brown and fragrant.
- Once baked, remove the pans from the oven and set them on a wire cooling rack. Allow the banana bread to cool in the pans for at least 10 minutes before carefully removing them to cool completely on the rack. Enjoy your moist and healthy homemade banana bread!
