This incredibly fresh and easy Black Bean and Corn Salad is the ultimate side dish for any summer gathering. Ingredients

  • 4 cups corn kernels (from 5 cobs of fresh corn, or use frozen)
  • 1 tablespoon coconut oil
  • 1 can Bush’s Reduced Sodium Black Beans (or regular), rinsed and drained
  • 1/2 red onion, finely chopped
  • 1 jalapeño, seeded and finely chopped (optional, adjust to taste)
  • 1 cup crumbled Cojita cheese (or crumbled feta cheese)
  • 1 avocado, diced
  • Juice of 2 limes
  • Small bunch fresh cilantro, chopped
  • Salt and freshly ground black pepper, to taste
