Celebrating One Year: A Blogiversary Feast and Heartfelt Thanks

Today marks an incredibly special day for Aggie’s Kitchen. It’s hard to believe, but a whole year has flown by since I timidly ventured into the world of food blogging. This post isn’t just about the delectable Mediterranean Shrimp and Pasta Toss I whipped up last night – though it certainly deserves its moment in the spotlight! – it’s a celebration of a year-long journey, a heartfelt thank you to all of you, and a reflection on how this little corner of the internet has blossomed into something truly wonderful.

Exactly one year ago, I found myself sitting at my laptop, a blend of excitement and uncertainty bubbling within me. I wasn’t entirely sure what “blogging” truly entailed, but I was ready to embrace it. It feels like only yesterday I was drafting those initial words, setting the stage for what would become Aggie’s Kitchen. I even kept a little snippet from that very first post, a reminder of those humble beginnings:

…is what Larry is calling me now that I have decided to join this so called modern world of “blogging”. I am still not 100% grasping what blogging is about but I am embracing it and going to make it my own….so here goes…

I love food. I love to entertain. I’ve learned this about myself in the last few years. I also love to share what I cook (both by feeding and talking about it)….and I love to hear about what others are cooking too.

I sometimes think I am borderline obsessive about food. So this will be a creative outlet for me. If you know me, you know that I can talk about food all day, so I finally have a place to talk to my heart’s content. =)

I am also going to use this blog as a way to organize myself. I have a bazillion recipes laying around my kitchen in manilla folders, and I have a nice collection of wonderful cookbooks too. I need a place to keep my thoughts on each recipe that I try or even one that I create from scratch. I find it very hard to follow a recipe to a tee, I am always tempted to change something, like add an extra spice or vegetable so this will be a perfect place for me to keep notes on the changes I make.

So here’s to my new place to be myself and talk talk talk …. so excited!!

Reflecting on those words, it’s clear that Aggie’s Kitchen has indeed become everything I hoped for and more. It has truly blossomed into my cherished “hangout” – a vibrant space where I can pour out my passion for food, share new culinary discoveries, and connect with an amazing community. The initial excitement I felt has only grown, transforming into a deep joy with every post, every comment, and every new recipe shared. This blog has become the creative outlet I craved, allowing me to express my “borderline obsessive” love for food in a meaningful way. It’s a place where I can talk to my heart’s content about ingredients, techniques, and the sheer pleasure of a good meal. Beyond that, it has been an invaluable tool for organizing the “bazillion recipes” that used to languish in manila folders. Now, each culinary experiment, whether a faithful recreation or a spontaneous adaptation, finds its home here, complete with my notes on tweaks and personal touches.

A Taste of Summer: Mediterranean Shrimp and Pasta Toss

Now, let’s dive into last night’s exceptionally easy and wonderfully flavorful dinner: a Mediterranean Shrimp and Pasta Toss. Lately, I’ve found myself in that all-too-familiar dinner rut, especially with the hot and humid Florida weather making me shy away from heavy cooking. The last thing I want after a long day is to stand over a hot stove for ages! So, I decided to embrace the art of “pantry cooking” – raiding my pantry and freezer for inspiration.

What caught my eye? A vibrant medley of capers, briny olives, and plump frozen shrimp, which quickly became the undisputed stars of the show. To elevate these humble ingredients, I stepped into my backyard, where a bounty of pretty, ripe cherry tomatoes and fragrant fresh basil awaited. With these simple yet powerful components, dinner was ready in an absolute flash. This dish perfectly embodies what I love about Mediterranean cuisine: fresh, bright flavors that come together effortlessly to create a satisfying and light meal, ideal for warm evenings.

Mediterranean Shrimp and Pasta Toss
Recipe from Aggie’s Kitchen
Serves 2-3

Ingredients:

  • 1/3 pound whole wheat rotini pasta (or your favorite short pasta, enough for 2-3 people)
  • 4 tablespoons extra virgin olive oil, divided
  • 1/2 large sweet onion, chopped finely
  • 3-4 cloves garlic, minced
  • 2 tablespoons capers, drained
  • 1/4 cup chopped mixed pitted olives (Kalamata and green olives work wonderfully)
  • 1/2 lb shrimp, peeled and deveined (fresh or frozen, thawed)
  • 1-2 cups cherry tomatoes, halved (from the garden if possible!)
  • Salt and freshly ground black pepper to taste
  • Handful of fresh basil, torn or roughly chopped
  • 1/2 lemon, juiced
  • Freshly grated Parmesan cheese, for serving (optional)

Instructions:

  1. Bring a large pot of salted water to a rolling boil. Add the whole wheat rotini pasta and cook according to package directions until al dente. Drain the pasta, reserving about 1/2 cup of the pasta water, and set aside.
  2. While the pasta is cooking, heat 2 tablespoons of olive oil in a large nonstick skillet or a wide, shallow pot over medium heat. Add the chopped sweet onion and minced garlic. Sauté for 2-3 minutes until the onions are softened and translucent, and the garlic is fragrant (be careful not to burn the garlic).
  3. Add the drained capers and the peeled, deveined shrimp to the skillet. Sauté for another 2-3 minutes, stirring occasionally, until the shrimp turn opaque and just pink. Avoid overcooking, as shrimp can become tough quickly.
  4. Add the halved cherry tomatoes and the cooked, drained pasta directly into the skillet with the shrimp mixture. Drizzle with the remaining 2 tablespoons of olive oil.
  5. Toss everything together gently to combine. Add the torn fresh basil and the fresh lemon juice. Stir once more.
  6. Season generously with salt and freshly ground black pepper to taste. If the pasta seems a little dry, add a splash or two of the reserved pasta water to create a light sauce.
  7. Serve immediately, garnished with extra fresh basil and a sprinkle of freshly grated Parmesan cheese, if desired.

Tips for Success & Variations:

  • Pasta Choice: While rotini works beautifully, feel free to use other short pasta shapes like penne, farfalle, or even spaghetti broken into shorter pieces.
  • Ingredient Quality: Using good quality extra virgin olive oil and fresh ingredients, especially the basil and tomatoes, will truly elevate the flavor of this simple dish.
  • Spice It Up: For a touch of heat, add a pinch of red pepper flakes along with the garlic and onions.
  • Add More Veggies: This recipe is incredibly versatile! Consider adding baby spinach, chopped bell peppers, or zucchini during the last few minutes of cooking for an extra boost of nutrients and color.
  • Protein Alternatives: Not a fan of shrimp? Cooked chicken, canned chickpeas, or even firm tofu could be used as protein substitutes. Adjust cooking times accordingly.
  • Make Ahead: While best served fresh, leftovers can be gently reheated. You might want to add an extra drizzle of olive oil or a squeeze of lemon juice to revive the flavors.
