Lately, rhubarb has been making quite a splash across the blogosphere, popping up in countless tempting recipes. I’ve noticed it here and here, among many other places. To be completely honest, I had never cooked with rhubarb before, and I wasn’t even entirely sure what it was—a fruit, I assumed? Its vibrant stalks always intrigued me, but its tart reputation kept me at a distance until now. For those unfamiliar, rhubarb is indeed a fascinating plant often treated as a fruit in culinary contexts, though botanically it’s a vegetable. Known for its distinctively sour flavor, it pairs beautifully with sweeter companions, creating a delightful balance that is incredibly satisfying.

My inspiration for this particular dish came from a recipe I stumbled upon in Cooking Light magazine for a Raspberry and Rhubarb Pie. As a huge fan of raspberries, the combination immediately caught my eye. However, the thought of preparing a pie crust felt a bit daunting for a casual weeknight dessert.   • 2 tablespoons Smart Balance whipped butter (or regular unsalted butter), softened
