Spinach Salad with Sweet Stone Fruits and Spiced Maple Pecans

In the vast and inspiring world of food blogging, connections often blossom into remarkable collaborations. A few weeks ago, my sister-in-law Jamie and I embarked on a culinary journey, dedicating an entire week to exploring the delightful and nutritious recipes championed by Cooking Light. Not long after our successful endeavor, the enthusiasm for healthy, flavorful cooking continued to spread. Shelby from The Life and Loves of Grumpy’s Honeybunch and Val of More than Burnt Toast also hosted their own week-long celebrations of delicious Cooking Light creations, further cementing our shared passion.

Inspired by these collective experiences and a mutual love for wholesome cuisine, the four of us, along with Helene of La Cuisine d’Helene, made a significant decision: to unite our culinary spirits and establish Cooking Light’s inaugural Virtual Supper Club! You might be asking, “What exactly is a Supper Club?” While the concept might seem new to some, it boasts a rich history. As it turns out, Cooking Light Supper Clubs have been a vibrant part of the culinary landscape for over a decade!

These clubs originally emerged from Cooking Light’s community message boards, where like-minded individuals sought companions who shared their enthusiasm for cooking, meticulous meal planning, and above all, a commitment to healthy eating. The traditional model is beautifully simple: gather a small group of people residing in the same geographical area, and voilà – you have a Supper Club! Each month, this group convenes for an intimate dinner party, where members proudly share dishes they’ve meticulously prepared from the pages of Cooking Light magazine. It’s an opportunity to savor delicious food, exchange cooking tips, and foster camaraderie around the dinner table, all while adhering to a healthy lifestyle.

Bridging Distances: The Global Reach of Our Virtual Supper Club

Our newly formed Virtual Supper Club beautifully embodies the core principles of its traditional counterpart: a genuine interest in cooking, a dedication to planning healthy meals, and a desire for shared culinary experiences. However, we introduce a fascinating twist: geographical boundaries simply don’t apply! Our members span continents and time zones, proving that passion for food transcends physical distance. Two of our talented chefs hail from Canada, another from the northeastern United States, and two of us, including myself, reside in the sunny southern state of Florida. This global tapestry is a testament to the incredible power of the food blogging world, which effortlessly connects individuals across countries and cultures through a shared love of gastronomy.

What amplifies our excitement for this venture is the incredible partnership we’ve forged with Cooking Light itself. They have graciously agreed to sponsor our monthly events, sharing our culinary journey and delicious recipes with their vast readership on their very own website. This collaboration not only validates our efforts but also provides an invaluable platform to inspire even more people to embrace healthy cooking and the joy of community dining, whether virtual or in person. It’s a truly thrilling development that will bring our shared passion to a wider audience, demonstrating that healthy eating can be both accessible and incredibly rewarding.

A Festive Summer Feast: Celebrating Canada Day and Fourth of July

For our inaugural dinner party, we decided to embark on a doubly festive celebration, honoring the vibrant summer holidays of both our countries: Canada Day and the Fourth of July! These holidays, steeped in tradition and joy, provided the perfect inspiration for a menu that is both celebratory and perfectly aligned with Cooking Light’s emphasis on fresh, wholesome ingredients. We envisioned a spread that captured the essence of summer – light, flavorful, and perfect for warm-weather gatherings. Our goal was to create dishes that evoke the spirit of outdoor entertaining, barbecues, and shared meals with loved ones, all while maintaining a healthy and balanced approach.

Our collective efforts culminated in a truly fabulous summer menu, meticulously curated to delight the palate and celebrate these significant national days. Each dish was thoughtfully selected to complement the others, creating a harmonious and unforgettable dining experience.

Our Special Holiday Menu Includes:

Charred Corn Relish, a vibrant and flavorful accompaniment, skillfully prepared by Jamie.

Spinach Salad with Stone Fruits and Maple-Spiced Pecans, my own contribution, a refreshing and unique salad.
Cool Creamy Chocolate Dessert, a perfectly indulgent yet light finish to our meal, created by Helene.

Doesn’t that sound absolutely incredible? Each dish promises to be a testament to healthy eating without compromising on flavor, showcasing the versatility and deliciousness that Cooking Light recipes are renowned for. This menu truly highlights the best of summer ingredients, offering a sophisticated yet approachable selection that caters to diverse tastes while celebrating the festive spirit of our chosen holidays.

My Contribution: Spinach Salad with Stone Fruits and Maple-Spiced Pecans

A close-up of the vibrant Spinach Salad with Stone Fruits and Maple-Spiced Pecans, ready to be served.

For my contribution to our festive summer menu, I crafted the “Spinach Salad with Stone Fruits and Maple-Spiced Pecans.” This salad is far more than just a side dish; it’s a symphony of textures and flavors that truly elevates a meal. I served it alongside a perfectly broiled salmon, generously rubbed with a homemade barbecue spice blend. The combination was nothing short of spectacular, with both elements complementing each other beautifully. My husband, a man of discerning taste, couldn’t stop raving about every bite, which is always the highest compliment a cook can receive.

What makes this spinach salad particularly unique is its innovative use of warm fruit and onion topping. This unexpected warmth adds a layer of depth and comfort that contrasts wonderfully with the crisp, fresh spinach. Imagine the slight char of grilled peaches or plums, gently mingling with caramelized red onion – it’s a revelation for the taste buds. The stone fruits, with their inherent sweetness and juicy tenderness, provide a delightful counterpoint to the peppery notes of the spinach, creating a balanced and incredibly satisfying profile.

And then there are the pecans. Oh, those crunchy, irresistible pecans! They were so addicting that I found myself continually reaching for more. These weren’t just any pecans; they were exceptional pecans sent to me earlier this month by The Pecan Store in Arizona. Their quality was immediately apparent, and they roasted to perfection in the oven, enveloped in a subtle yet distinct maple-spiced glaze. This delicate glaze enhances the natural nuttiness of the pecans, adding a touch of sweetness and warmth that ties all the salad’s components together. The crunch they impart is essential, providing a textural contrast that keeps every spoonful exciting and fresh.

The beauty of this salad lies in its versatility. While it pairs beautifully with grilled or broiled fish, it would also be an excellent accompaniment to grilled chicken, pork, or even as a light vegetarian main course. It’s a testament to how simple, fresh ingredients, when combined thoughtfully, can create a truly memorable dish that is both nutritious and incredibly flavorful. This recipe perfectly encapsulates the spirit of our Cooking Light Virtual Supper Club – creating delicious, healthy meals that are anything but boring.
