  • 1 15 oz can diced tomatoes with onion and garlic, thoroughly drained
  • 1 small can (approx. 4 oz) diced green chilies, drained
  • 1/2 cup frozen corn
  • 1 tablespoon olive oil
  • Salt and freshly ground black pepper, to taste
  • A generous handful of fresh chopped cilantro, for garnish

Directions:

  1. For Rice Cooker: Place the wild rice at the bottom of your rice cooker pot. Carefully pour in the water. Then, gently layer the drained diced tomatoes, diced green chilies, and frozen corn on top of the rice and water. Do NOT stir the ingredients; layering is key for even cooking. Close the lid and set your rice cooker to its standard “Cook” or “White Rice” setting.
  2. For Stovetop: In a heavy-bottomed pot with a tight-fitting lid, combine the wild rice and water. Bring to a boil over medium-high heat.
