  • 3 cups old-fashioned oats (ensure you use old-fashioned, not quick-cooking, for the best texture)
  • 1 cup sweetened shredded coconut (I often opt for the unsweetened variety for better sugar control and a more natural coconut flavor)
  • 1 cup chopped pecans (sliced almonds were a wonderful substitution when pecans weren’t available, feel free to use your preferred nut)
  • 1 teaspoon sea or kosher salt (enhances all the other flavors beautifully)
  • 1 teaspoon ground cinnamon (the warming heart of our spice blend)
  • 1/4 teaspoon ground nutmeg (adds a layer of subtle sweetness and warmth)
  • 1/4 teaspoon ground ginger (provides a delightful, zesty kick)
  • 1 teaspoon vanilla extract (rounds out the flavors with its comforting aroma)
  • 1/2 cup pure maple syrup (our primary natural sweetener, choose good quality)
  • 1/4 cup apple cider or apple juice (contributes a lovely moisture and fruitiness)

Directions:

  1. Begin by preheating your oven to 350 degrees Fahrenheit (175 degrees Celsius). While the oven heats, take a large, rimmed baking sheet and lightly grease it with a small amount of vegetable oil or a quick spray of non-stick cooking spray. Set this prepared sheet aside.
  2. In a generously sized mixing bowl, combine the dry ingredients: oats, shredded coconut, chopped nuts (pecans or almonds work wonderfully here), sea or kosher salt, ground cinnamon, nutmeg, and ginger.
