  • 1 1/2 cups shredded cheese of choice (pepper jack for a kick, or mild cheddar, mozzarella, or Monterey Jack for classic melty goodness)

Directions:

  1. Prepare the Vegetables: Heat the light oil in a large non-stick skillet over medium heat (or simply spray the pan with cooking spray). Add the sliced zucchini and red onion to the skillet. Sprinkle with cumin, salt, and pepper. Cook the vegetables for about 5-7 minutes, stirring occasionally, until they are tender-crisp and slightly softened.
