When the opportunity arose to contribute an appetizer recipe to the “Swap It or Top It” Kitchen Play event, in collaboration with The Mushroom Council, my mind immediately conjured this vibrant grilled summer meatless flatbread pizza. Flatbreads are an entertainer’s dream; their simplicity and adaptability make them ideal for entertaining, allowing for quick preparation without compromising on flavor or presentation. The beauty lies in their ease – they can be whipped up in minutes, leaving you more time to enjoy your guests.
For this recipe, I began by gently sautéing thinly sliced portabella mushrooms with a touch of olive oil, fragrant fresh thyme, and a simple seasoning of salt and pepper. This initial step brings out their natural sweetness and tenderness, creating a perfect base for the flatbreads. I opted for Naan bread as the foundation for these pizzas, primarily because of its wonderful texture and its ability to hold up beautifully on the grill, achieving a delightful crispy-chewy consistency. The Naan flatbreads were first briefly warmed on the grill to give them a slight char and structure. Once lightly toasted, they were removed and generously topped with a luscious smear of fresh pesto, followed by the sautéed mushrooms, and, of course, a generous sprinkle of shredded cheese.
The final touch involves returning these vibrant flatbreads to the grill (or into a preheated oven) just long enough for the cheese to melt into a bubbly, golden perfection. The result is an impressively gourmet appetizer that requires minimal effort, yet delivers maximum flavor and visual appeal. These grilled flatbreads are not just food; they are an experience – a perfect blend of smoky, earthy, and herbaceous notes, all contributing to a truly memorable bite.

Grilled Portabella Mushroom Pesto Flatbread Pizza
Yield: serves 6-8 (as an appetizer) or 2-4 (as a meal)

Ingredients:
- 10 Portabella mushrooms, sliced thin
- 1 Vidalia onion, sliced thin
- 1 teaspoon olive oil
- big pinch salt and pepper
- 2 teaspoon fresh thyme, chopped
- 2 Naan breads
- 2 tablespoons pesto
- 6 oz mozzarella, shredded
- 2 tablespoons Parmesan cheese
Directions:
- In a large nonstick skillet over medium heat, cook mushrooms and onions in 1 teaspoon of olive oil. Add a pinch of salt and pepper and continue to cook for up to 7 minutes until mushrooms and onions start to soften and turn golden. Add chopped thyme to mushrooms and onions and stir, cooking for a minute or two longer to release the herb’s aroma. Set aside.
- Heat your grill to medium heat. Place Naan bread directly on the grill grates and heat both sides for 1-2 minutes each, until lightly toasted and marked. Carefully remove from the grill and place on a large plate or cutting board, preparing them for the toppings.
- To assemble the pizzas, carefully spread pesto evenly over the surface of each flatbread, ensuring full coverage. Evenly distribute the shredded mozzarella and Parmesan cheeses over both flatbreads. Finally, top generously with the sautéed mushroom and onion mixture. Place the prepared flatbreads back on the grill and cook with the grill cover shut for a few minutes until the cheese is beautifully melted and bubbly. Once done, remove from the grill, slice into small finger-food sized portions, and serve immediately to enjoy the warm, gooey goodness.
