Life can get busy, pulling us in many directions and sometimes away from our favorite creative outlets. While the blog might have been a little quiet, the kitchen certainly hasn’t! Despite fewer photo shoots, the culinary adventures have continued, especially with exciting new ingredients making their way into my home.

A few weeks ago, I had the pleasure of receiving a wonderful package of frozen fish from the Alaska Seafood Marketing Institute. I was thrilled when they reached out, inviting me to explore their innovative Cook It Frozen techniques with the premium seafood they provided. This was a game-changer for my busy weeknights!

I’ve put two of their ingenious methods to the test: broiling and grilling, the latter being the star of today’s incredible Chipotle Salmon Tacos recipe. To my pleasant surprise, the results were consistently fantastic. I confess, I had my doubts about cooking fish straight from the freezer, fearing a soggy outcome. However, the frozen salmon fillets cooked up beautifully, yielding a tender, flaky texture that rivaled perfectly defrosted fish. It’s truly revolutionary for quick, healthy meals. I even downloaded their handy app to my iPhone, making it even easier to master these techniques.

These Chipotle Salmon Tacos have quickly become a staple in our home. They are more than just a meal; they’re an experience – vibrant, flavorful, and incredibly satisfying. The rich, smoky chipotle rub delivers a delightful kick, precisely how we love our flavors. Imagine a warm Saturday night, the sun setting, a refreshing dip in the pool just behind you, and then gathering around the table for these incredible tacos. It’s the quintessential taste of summer, and here in Florida, we’re already fully embracing the season.

One of the best aspects of tacos is their versatility, making them perfect for families with varying taste preferences. While we adore the bold chipotle flavor, I always ensure there’s a kid-friendly version available. For the little ones, I seasoned their salmon with a milder blend of garlic, dill, salt, and pepper, skipping the chipotle heat. They enthusiastically enjoyed their tacos topped with shredded cabbage, a sprinkle of cheese, and a squeeze of fresh lime juice. It’s always amusing to see them grab their toy cameras, eager to snap photos of their food – a testament to how normalized food photography has become in our household!

Lately, I’ve been pleasantly surprised by my kids’ growing adventurousness at dinnertime. I’ve gradually phased out the “kiddie option” – that often meant cooking a second dinner for me – unless it’s truly something they absolutely won’t touch. This approach has been incredibly successful, encouraging them to explore new flavors and textures. It’s a huge relief and a testament to the idea that sometimes, gentle nudging towards trying new foods pays off beautifully. And when those new foods are as delicious and customizable as these Chipotle Salmon Tacos, it’s a win-win for everyone!

Chipotle Salmon Tacos

Ingredients:

  • 1 lb frozen salmon fillets (Refer to our video for grilling from frozen or see directions below. If using defrosted salmon, see ‘Note’.)
  • 2 teaspoons chipotle powder, for a smoky kick
  • 1 juicy lime, freshly squeezed for zest and brightness
  • Salt and freshly ground black pepper, to taste
  • 1/2 teaspoon brown sugar, to balance the spice
  • 1/2 teaspoon dried oregano (Mexican oregano, if available, for authentic flavor)
  • 1 teaspoon olive or vegetable oil
  • Flour or corn tortillas, for serving (warm them up just before serving!)

Taco Fixings:

  • Prepared guacamole or thinly sliced fresh avocado
  • Shredded green cabbage or a ready-made cole slaw mix for crunch
  • Fresh cilantro, chopped, for herbaceous notes
  • Crumbled queso fresco or cojita cheese for creamy texture
  • Thinly sliced white onion, for a mild bite
  • Extra lime wedges, for a final squeeze of freshness

Directions:

  1. Prepare the Chipotle Paste: In a small bowl, combine the chipotle powder, fresh lime juice, salt, pepper, brown sugar, oregano, and olive or vegetable oil. Mix thoroughly to create a thick, flavorful paste. Set this aside to let the flavors meld.
  2. Preheat Your Grill: Heat your grill to a consistent 400ºF (approximately 200ºC). This ensures even cooking and a beautifully seared exterior.
  3. Grill the Frozen Salmon (Foil Packet Method): Gently rinse the frozen seafood under cold running water to remove any ice glaze, then pat it thoroughly dry with a paper towel. Tear an 18-inch wide sheet of heavy-duty foil, ensuring it is at least 4 inches longer than your salmon fillet. Lightly spray the dull side of the foil with cooking spray or brush with oil. Place the salmon, skin side down, onto the prepared foil. Brush both sides of the fish with a little olive or vegetable oil. Bring the longer sides of the foil together and fold them over several times to create a secure seam. Roll up the ends tightly to form a sealed packet. Place the foil packet on the preheated grill, seam side down, and cook for 8 to 10 minutes. Carefully remove the packet from the grill, open it, and generously brush or rub the prepared chipotle paste over both sides of the salmon. Loosely crimp the foil to re-close the packet and return it to the grill, this time seam side up.
  4. Finish Cooking and Serve: Continue to cook the salmon for an additional 8 to 10 minutes. The fish is done as soon as it turns opaque throughout and flakes easily with a fork. Remove immediately from heat to prevent overcooking.

    Note for Fresh or Defrosted Salmon:

    If you’re using fresh or already defrosted salmon, you can skip the rinsing step. Simply place the salmon into a foil packet (as described above), rub the chipotle seasoning paste over both sides of the fish, and seal the packet. Place on the grill and cook on one side for about 5 minutes, then carefully turn the packet over and cook for an additional 3-4 minutes. Always check for doneness to ensure a perfectly cooked fillet.

    To serve your Chipotle Salmon Tacos:

    Warm your tortillas. Spread a generous layer of prepared guacamole or a smear of fresh avocado onto each tortilla. Flake the tender, chipotle-infused salmon over the avocado. Now comes the fun part – pile on your favorite fixings! Add shredded cabbage for crunch, fresh cilantro, crumbled queso fresco, and a few slices of white onion. Don’t forget to squeeze a fresh lime wedge over the fish and veggies for that essential burst of citrus. Take a big, satisfying (and wonderfully messy!) bite.
