This Smoked Salmon Frittata is a wonderfully easy and versatile dish, perfect for any meal of the day. Inspired by a decadent smoked salmon quiche, this lighter version combines the rich flavors of smoked salmon with the tangy creaminess of goat cheese and the fresh zest of dill, all baked into a fluffy egg base. It’s a quick, healthy, and satisfying recipe that’s sure to impress!


Ingredients

  • 1 tablespoon olive oil
  • 4 oz quality smoked salmon, thinly sliced or flaked
  • 6 large eggs
  • 2 tablespoons whole milk (or half-and-half for extra richness)
  • 1/4 teaspoon dried dill (or 1 teaspoon fresh, chopped)
  • Coarse salt and freshly ground black pepper, to taste
  • 2 oz soft goat cheese, crumbled

Instructions

  1. Preheat your broiler to high. Position an oven rack in the upper-middle position, about 6-8 inches from the broiler element.
  2. Heat the olive oil in a 10-inch nonstick, oven-safe skillet over medium heat. Ensure the skillet handle is also oven-safe (or wrap it in foil if not).
  3. Gently add the 4 oz of smoked salmon, broken into smaller pieces, into the heated skillet. Whisk the 6 eggs thoroughly with the milk in a separate bowl until the mixture is light, airy, and frothy. Pour the whisked eggs carefully over the salmon in the skillet. Allow the eggs to cook undisturbed for about 3-4 minutes, or until the edges begin to set and the bottom is lightly golden.
  4. Season the partially set egg mixture evenly with the dried dill, a pinch of coarse salt, and freshly ground black pepper. Then, sprinkle the crumbled goat cheese uniformly over the top of the frittata. Carefully transfer the skillet to the preheated broiler. Broil for 4-6 minutes, keeping a close eye on it, until the eggs are completely set and fluffy, and the top is lightly golden brown with the goat cheese slightly melted and bubbly.
  5. Once cooked, remove the skillet from the oven using an oven mitt (the handle will be very hot!). Let the frittata cool slightly in the skillet for a few minutes before slicing it into 4 even wedges or triangles to serve. Enjoy warm!
