It’s What’s For Dinner Wednesday Challenge drew to a close, I found myself anticipating a culinary adventure I’d long dreamt of embarking on: mastering Beef Bourguignon. Inspired by the captivating scenes in “Julie & Julia,” my husband had subtly hinted at his desire for this iconic French dish. While its grandeur in the film seemed far removed from my usual weekly dinner routine, the thought of recreating such a masterpiece in my own kitchen was undeniably tempting. Thankfully, the humble slow cooker stepped in as my culinary ally, making this seemingly complex dish surprisingly accessible and truly a delight to prepare.

Transforming the traditional Beef Bourguignon recipe, generously provided by the Beef. It’s What’s For Dinner initiative, into a slow cooker-friendly meal was a revelation. Often, I shy away from recipes that demand the extra step of browning meat before slow cooking. However, for a dish as revered as Bourguignon, I decided to embrace this crucial preliminary step. My secret to making it stress-free? Planning ahead! The night before, I simply browned the beef chuck pieces, then transferred them directly into my slow cooker bowl, which I stored in the refrigerator overnight. This small act of foresight made all the difference, setting the stage for an incredibly convenient cooking experience the following day.

The next morning was wonderfully uncomplicated. I merely added fresh carrots, onions, mushrooms, a generous pour of dry red wine, and a blend of aromatic seasonings to the slow cooker. With a flick of a switch, my kitchen began its slow transformation into a haven of intoxicating aromas. There’s truly nothing quite like walking through your front door after a bustling, busy day to the comforting fragrance of beef stewing gently in a rich wine sauce.   • 2 cups Burgundy or other dry red wine (such as Pinot Noir or Cabernet Sauvignon)
  • 2 tablespoons tomato paste
  • 4 crushed garlic cloves
  • 2 teaspoons dried marjoram leaves, crushed
  • 8 ounces baby carrots (about 13/4 cups)
  • 8 ounces fresh pearl onions, peeled or frozen pearl onions
  • 8 ounces mushrooms, quartered if large (cremini or button work well)
  • Chopped fresh parsley (optional, for garnish)

Instructions

  1. Lightly coat the beef chuck pieces with all-purpose flour, ensuring an even layer. Heat 2 tablespoons of olive oil in a large stockpot or Dutch oven over medium-high heat until shimmering. Brown half of the floured beef until nicely colored on all sides; remove from the stockpot. Repeat this process with the remaining beef, adding more olive oil as needed. Transfer all browned beef from the stockpot into your slow cooker. Season the beef generously with salt and pepper. Pour 1/2 cup of water into the hot stockpot and scrape up any browned bits (fond) from the bottom of the pot, deglazing it thoroughly.
