• 1-2 zucchinis, trimmed and chopped into half-moon or quarter pieces

• 2 yellow squash, trimmed and chopped into similar pieces as zucchini

• 1/2 medium red onion, thinly sliced or roughly chopped

• 4-5 garlic cloves, crushed or minced

• 1/2 cup (or to taste) store-bought or homemade pesto

• 2 tablespoons pine nuts

• 1 1/2 – 2 cups mozzarella cheese, freshly shredded for best melt

• 2 tablespoons olive oil (1 tbsp for veggies, 1 tbsp for dough if needed)

• Salt and freshly ground black pepper to taste

Pizza Dough Preparation

Instructions:
