For many of us, especially those with roots in Italian traditions, pasta with sauce isn’t just a meal; it’s a profound connection to family, heritage, and pure comfort. Growing up in an Italian household, pasta was a staple, gracing our dinner table with remarkable frequency. And truthfully, I could never, ever tire of it. The simple joy of a perfectly cooked noodle, coated in a rich, savory sauce, remains one of life’s most comforting pleasures.

While my lifestyle these days might not allow for pasta every single night, I make it a point to indulge in this beloved dish at least once a week. Life has a way of throwing exciting challenges our way, and for me, that challenge has been my triathlon training. It’s hard to believe, but I’m already deep into my 9th week of preparing for the big race! The finish line is fast approaching, and with each passing day, my excitement (and a touch of nervous energy!) grows. I’m incredibly fortunate to have joined a fantastic team of women at my local YMCA. Sharing this demanding but incredibly rewarding training experience with them has been an absolute joy and a huge motivator.

Our routine is intense: we train six days a week, though I’m always thrilled if I manage to fit in five solid sessions. Saturday mornings are dedicated to “bricks,” which are combined training sessions where we transition directly from one leg of the triathlon to another. For example, this past Saturday, we powered through a 13-mile bike ride, immediately followed by a 25-minute run. These bricks are crucial for building endurance and preparing our bodies for race day transitions. In the coming weeks, we’re stepping up the intensity even further, incorporating open water swims and more challenging workouts to sharpen our skills and stamina. If you’ve ever contemplated tackling a sprint triathlon, I wholeheartedly encourage you to find a training group. The camaraderie, shared effort, and collective encouragement make the journey so much more enjoyable and truly unforgettable. Training for something like this demands a lot of energy, and that’s precisely why simple, nutrient-rich meals like this Penne with Sausage, Spinach, and Tomatoes are absolute lifesavers in my kitchen.

Whether you’re an athlete in training, a busy parent, or simply someone who appreciates good food made easy, this pasta dish is designed to fit seamlessly into your life. It’s hearty enough to refuel your body after a tough workout, yet light enough not to weigh you down. The combination of savory sausage, vibrant tomatoes, and tender spinach creates a symphony of flavors that will satisfy even the most discerning palates. And the use of whole wheat penne adds an extra layer of fiber and nutrients, making it a smart choice for any meal.

Beyond its health benefits, this recipe is a testament to the fact that delicious, wholesome cooking doesn’t have to be complicated or time-consuming. From the moment the first ingredients hit the pan to the final sprinkle of Parmesan, you’ll find joy in the simplicity and the aromatic experience. So go ahead, treat yourself and your loved ones to a bowl of this incredible pasta. It’s a celebration of good food, good health, and the simple pleasures of a homemade meal.

Yield: Serves 3-4

Ingredients:

  • 1/2 lb whole wheat penne pasta
  • 2 tsp olive oil
  • 1 medium onion, chopped
  • 2-3 cloves garlic, minced
  • Salt and freshly ground black pepper to taste
  • 3-4 links Italian Turkey Sausage, casings removed (or pork/chicken sausage for variation)
  • 1 large (28 oz) can of crushed tomatoes
  • 1 small (14.5 oz) can of Italian diced tomatoes
  • 1/2 bag (approx. 5-6 oz) of fresh spinach
  • Parmesan cheese, freshly grated, for serving
  • Red pepper flakes, for serving (optional, for a kick)

Directions:

  1. Begin by preparing your pasta. Bring a large pot of generously salted water to a rolling boil. Add the whole wheat penne pasta and cook according to the package directions, but aim to slightly undercook it by about 1-2 minutes. This is crucial because the pasta will finish cooking in the hot sauce, absorbing its delicious flavors and achieving the perfect al dente texture. Drain the pasta and set aside.
  2. While the pasta is cooking, heat a large sauté pan or a Dutch oven over medium heat. Drizzle in a couple of teaspoons of olive oil. Add the chopped onion and minced garlic, stirring occasionally until the onions begin to soften and become translucent, typically 3-5 minutes. Be careful not to burn the garlic. Season lightly with salt and pepper at this stage to enhance the flavors.
  3. Next, add the Italian turkey sausage (with casings removed) to the pan. Using a wooden spoon or spatula, break up the sausage into small crumbles as it cooks. Continue to cook, stirring frequently, until the sausage is completely browned and cooked through, which usually takes about 8-10 minutes. This step is essential for developing a rich base flavor for your sauce.
  4. Once the sausage is cooked, pour in both cans of crushed tomatoes and diced tomatoes. Stir everything together, ensuring the sausage and aromatics are well integrated into the tomato base. Bring the sauce to a gentle simmer. Add more salt and pepper to taste, adjusting as needed. Let the sauce cook together for approximately 5-8 minutes, allowing the flavors to meld and deepen beautifully.
  5. Reduce the heat to low. Add the fresh spinach leaves to the sauce, stirring them in gently. The heat from the sauce will quickly wilt the spinach. Continue to stir until the spinach is fully incorporated and softened, which only takes a minute or two.
  6. Finally, add the slightly undercooked pasta directly into the sauce. Toss everything together vigorously until the pasta is thoroughly coated with the sauce and the spinach is evenly distributed. Let it cook for another 1-2 minutes, allowing the pasta to absorb some of the sauce and finish cooking to perfection.
  7. Serve your Penne with Sausage, Spinach, and Tomatoes immediately in warm bowls. Garnish generously with freshly grated Parmesan cheese and a sprinkle of red pepper flakes if you enjoy a little extra warmth and spice. Enjoy this comforting and wholesome meal!
