Inspired by the Love Boat’s famous bartender, Isaac, this Pomegranate Rum Cocktail will instantly make you feel like you are on vacation!
Ingredients
- 1 part white rum (I used 2 shots of the larger side of a measuring jigger)
- 1 part pomegranate juice (I used 2 shots of the larger side of a measuring jigger)
- juice from half a lime, freshly squeezed
- splash club soda
- pomegranate arils, garnish
- lime wedges, garnish
Instructions
- Fill a tall glass with ice.
- In a shaker, add ice, rum, pomegranate juice and lime juice. Shake vigorously until well chilled. Strain the mixture into your prepared cocktail glass. Top with a splash of club soda for extra fizz and garnish beautifully with fresh lime wedges and a sprinkling of vibrant pomegranate arils. Serve immediately and enjoy your taste of vacation!
