As a parent, I often feel like my kitchen is a revolving door of meals and snacks, constantly trying to keep up with my children’s boundless energy and equally boundless appetites. It’s a wonderful thing, seeing them enjoy food, and it certainly warms my Italian mama heart. However, it also presents a continuous challenge: how to consistently provide smart, healthy, and appealing snacks that prevent them from reaching for less nutritious options. My usual rotation includes yogurt, cheese sticks, fresh fruit, pretzels, and homemade granola bars. But let’s be honest, even the best snacks can lead to boredom if they’re too repetitive.
A few weeks ago, during a long holiday weekend from school, I decided it was time to introduce something new and exciting. My kids absolutely adore parfaits and request them frequently, which means I’m always trying to keep up with our granola supply – a task I sometimes fall behind on because it disappears so quickly! This time, however, I wanted to try a different approach. Instead of traditional parfaits, I presented them with a plate of homemade Blueberry Almond Oatmeal Bites, served alongside a creamy bowl of Greek yogurt, lightly drizzled with honey.
