First and foremost, I must admit how much I’ve missed sharing new content here on the blog! My last post, a delicious Spinach and Potato Frittata, feels like weeks ago, and I can hardly believe how quickly this month has flown by. Life has taken on a rather hectic pace since I embarked on my new academic journey last month. I’ve humbly confessed to everyone in my life who’s had to witness my recent frenzy – particularly my incredibly patient husband and children – that enrolling in two intensive science classes with labs (Anatomy & Physiology 2 and Chemistry I) in a single semester was, perhaps, not my most brilliant idea. For those who might not know, I decided to go back to school earlier this year with the ambitious goal of becoming a registered dietitian. Currently, I find myself somewhat submerged, grappling to keep pace with the demanding coursework. This is compounded by a significant learning curve – one I hugely underestimated – that accompanies subjects like chemistry. Imagine navigating scientific calculators, re-learning basic algebra and complex math equations, and safely handling test tubes, beakers, and various “stuff” (which is scientist-speak for chemicals) in a lab setting. Oh, the joys! The sheer volume of math alone has truly been a shake-up for my brain, which, I can confirm, is quite rusty in that department!
Amidst the academic whirlwind, moments of deep breaths are essential. All will be well. If there’s one profound lesson I’ve gleaned from being a student at my age ( 😉 ), it’s recognizing my naturally high expectations. As my good friend Kristen wisely reminded me recently, it’s genuinely okay if I don’t achieve a perfect ‘A’ in every course. The primary goal is to simply get through it, to learn, and to grow!
