Zucchini and Parmesan Frittata: A Quick & Healthy Meal

Yield: Serves 2, or 1 very hungry person for a complete meal

Ingredients:

  • 2 large eggs
  • 1/4 – 1/3 cup egg whites (liquid or from about 2 additional eggs)
  • 1 medium zucchini, halved lengthwise and then thinly sliced
  • 1/4 large sweet onion, thinly sliced
  • Salt and freshly ground black pepper, to taste
  • Pinch of red pepper flakes, optional, for a hint of heat
  • 2 teaspoons grated Parmesan cheese (use reduced-fat or fat-free if following a strict diet; regular offers richer flavor)

Directions for Preparation:

  1. Preheat your oven’s broiler to get it ready for the final step.
  2. Heat a small (approximately 8-inch) nonstick, oven-safe skillet over medium heat. Lightly spray the pan with cooking spray. Add the thinly sliced zucchini and onion to the pan. Sprinkle with a little salt and pepper. Cook for several minutes, stirring occasionally, until the vegetables begin to soften and become slightly translucent.
  3. While the vegetables are cooking, whisk together the whole eggs and egg whites in a bowl until well combined and slightly frothy.
  4. Pour the whisked egg mixture over the softened zucchini and onion in the skillet. Swirl the pan gently to distribute the eggs evenly. Cook without stirring for approximately 2-3 minutes, or until the edges and bottom of the frittata start to set.
