There have been moments where I’ve felt on the verge of losing my mind, yet somehow, an underlying sense of calm has prevailed, allowing us to manage everything step-by-step. It’s a paradox I’m still trying to fully grasp!
Our Journey to a New Family Home
Our quest for a new family home began last December. With a growing family, we knew we needed a bit more room to stretch out and create new memories. The search was initially diligent, but I admit, I eased off significantly over the summer. The thought of orchestrating a major move right before a baby arrived seemed, well, unfeasible at best. - 6 cups roughly chopped kale (I used about half a bag of Glory Kale Greens for convenience)
- 1 tablespoon olive oil
- 1 clove of garlic, minced
- Juice from one medium lemon (adjust to taste for more or less lemon flavor)
- A generous pinch of sea salt and freshly ground black pepper
- 2-3 tablespoons toasted pine nuts
Directions:
- Begin by heating the olive oil in a large non-stick skillet over medium heat. Once shimmering, add the minced garlic and cook for approximately 30-60 seconds, or until it becomes fragrant but not browned.
- Add the roughly chopped kale to the skillet, along with the salt and pepper. Cook the kale for several minutes, gently tossing it with tongs, until it begins to wilt and soften.
- Continue to sauté the kale for about 4-5 minutes, or until it has cooked down to your desired tenderness. At this point, pour in the fresh juice from one lemon.
