I initially discovered the original chicken version of this recipe in The All-New Complete Cooking Light Cookbook, a true treasure trove of healthy recipes that I enthusiastically checked out from our local library. This cookbook is an absolute gem – its sheer size, comprehensive nature, and wide variety of tempting recipes make it an indispensable resource for any health-conscious home cook.

While the original recipe called for chicken, I happened to have a pound of lean ground turkey on hand and decided to put a delicious, healthy spin on it. The result was nothing short of spectacular: turkey burgers that were incredibly juicy, bursting with vibrant, aromatic flavors, and remarkably satisfying. We frequently enjoy turkey burgers at our house as a leaner alternative to traditional beef burgers, and these were a delightful departure from our usual go-to version. The blend of fresh ginger, garlic, and a hint of chile paste in the patties creates an exciting flavor profile that stands out.

However, the true star of the show might just be the accompanying peanut sauce. If you’re a fan of rich, savory, and slightly sweet peanut butter, then this sauce is going to completely win you over.   • 1 1/2 teaspoons dark sesame oil
  • 1 teaspoon water (adjust for desired consistency)
  • 1 teaspoon rice vinegar (adds a bright, tangy note)
  • 1 garlic clove, finely minced (for aromatic depth)

For the Flavorful Turkey Burgers:

  • 1/2 cup finely chopped green onions (adds mild onion flavor and texture)
  • 1 heaping tablespoon chile paste with garlic (such as sambal oelek, or Sriracha for a milder kick)
  • 1 tablespoon finely minced fresh ginger (essential for that fresh, zesty flavor)
  • 2 teaspoons low-sodium soy sauce
  • A good pinch of salt and freshly ground black pepper, to taste
  • 1 lb lean ground turkey (preferably 93% lean for juicy results)
  • Cooking spray (for ensuring non-stick grilling)
  • 4 Arnold’s Whole Wheat Sandwich Thins (or other preferred whole-wheat buns/breads)
  • 1 cup fresh alfalfa sprouts (for a crisp, refreshing garnish)
 

Directions:

 

  1. Prepare the Silky Peanut Sauce: In a small bowl, combine the creamy peanut butter, low-sodium soy sauce, dark sesame oil, water, rice vinegar, and finely minced garlic. Whisk vigorously with a fork or small whisk until the mixture is completely smooth, well-emulsified, and has a luscious, pourable consistency. If it’s too thick, add another tiny splash of water. Set this flavorful sauce aside.
  2. Preheat Your Grill or Grill Pan: Prepare your outdoor grill for medium heat, ensuring the grates are clean and lightly oiled. Alternatively, preheat a large nonstick grill pan over medium-high heat on your stovetop. Allow it to heat thoroughly to achieve a good sear.
  3. Craft the Flavorful Turkey Patties: In a large mixing bowl, gently combine the finely chopped green onions, chile paste with garlic, minced fresh ginger, low-sodium soy sauce, salt, and freshly ground black pepper with the lean ground turkey. It’s crucial not to overmix the turkey, as this can lead to tough and dry burgers. Mix just until all ingredients are evenly distributed. Divide the mixture into 4 equal portions, and carefully shape each portion into a 1/2-inch-thick patty. Ensure the patties are uniform in size for consistent cooking.
  4. Grill the Burgers to Perfection: Lightly coat the grill rack or preheated grill pan with cooking spray. Carefully place the formed turkey patties on the prepared surface. Grill for approximately 4 minutes on each side, or until the internal temperature reaches 165°F (74°C) and the burgers are thoroughly cooked through with no pink remaining. While the burgers are cooking, lightly toast your sandwich thins. Place the rolls, cut sides down, on the grill rack or grill pan for about 30 seconds, or until they are lightly golden and warmed through, adding a pleasant crunch.
  5. Assemble and Serve Immediately: To assemble these delightful burgers, place one cooked turkey patty on the bottom half of each toasted sandwich thin. Top each burger generously with about 1/4 cup of fresh alfalfa sprouts, which add a wonderful crunch and freshness. Then, drizzle approximately 1 tablespoon of the prepared peanut sauce over the sprouts and patty. Crown with the top half of the sandwich thin. Serve immediately and savor every bite of this healthy, flavor-packed meal!
