This phenomenal pineapple salsa recently took center stage as part of a magnificent spread I curated for my husband, Larry’s, milestone 40th birthday bash. Our good friend, Rich, a master of the smoker, dedicated the entire day before the party to slow-cooking an impressive array of pork and beef. This succulent, smoky meat was served sandwich-style, accompanied by a delectable horsey sauce and several bottles of Larry’s absolute favorite barbecue sauces, ensuring every guest could customize their perfect bite. The spread was extensive and thoughtfully chosen, featuring a variety of flavors and textures designed to delight every palate. Alongside this vibrant pineapple salsa, we offered a refreshing Cucumber and Feta Greek Yogurt Dip, which I paired with crispy pita chips – a personal weakness I simply couldn’t resist! Though the pace has shifted to a slightly more low-key, intimate setting, perhaps a delightful fondue outing with the kids, the celebration of Larry continues with warmth and affection.

Heidi’s Pineapple Salsa

  • 1 whole ripe pineapple, peeled, cored, and diced into small, even pieces
  • Juice from 2 fresh limes (approximately 2-3 tablespoons, adjust to taste)
  • 1 small can (approx. 11 oz) mandarin oranges, thoroughly rinsed and drained, then roughly chopped
  • 3-4 jalapeños, stems removed, seeded, and finely diced (for less heat, remove more seeds and membranes; for more heat, leave some in)
  • A generous handful of fresh cilantro, finely chopped (about ½ cup)
  • A big pinch of sea salt and freshly ground black pepper, to taste

Directions:

  1. In a large mixing bowl, gently combine all the prepared ingredients: diced pineapple, fresh lime juice, chopped mandarin oranges, diced jalapeños, and chopped cilantro. Stir well to ensure all the flavors are evenly distributed.
  2. Taste the salsa and season generously with a big pinch of salt and freshly ground black pepper. Adjust seasoning as needed, adding more lime juice for tang, jalapeño for heat, or cilantro for freshness according to your preference.
