They offer a delightful and nutritious alternative that will quickly become a cherished favorite.

The Perfect Meal, Any Time of Day: Black Bean and Egg Tostadas
For many, breakfast often falls into a comfortable, albeit sometimes predictable, rhythm. My personal go-to has long been a simple fried egg paired with a slice of lightly buttered Ezekiel bread, accompanied by my essential cup of coffee. While I occasionally venture into an oatmeal phase, the quick egg and toast remains a steadfast choice. However, when the desire for something more exciting strikes, especially for a delightful ‘breakfast for dinner’ experience, these easy Black Bean and Egg Tostadas are my ultimate culinary escape. They provide all the comfort and protein of eggs, but with an exhilarating Tex-Mex twist that elevates the entire meal.
Effortless Preparation for Busy Lives
One of the most appealing aspects of this Black Bean and Egg Tostada recipe is its remarkable speed and simplicity. If your kitchen is already stocked with the basic ingredients – which, let’s be honest, is highly probable for most households – you can have these delicious tostadas ready and on your plate in literally just a few minutes. It’s the kind of recipe that makes you feel like a culinary wizard, even on the busiest of days. While the recipe is designed for a single serving, creating one perfect tostada, I often find myself preparing (and happily devouring) two at a time. They’re simply that good and so satisfying!

A Versatile Solution for Every Craving
This humble recipe deserves a prominent spot in your collection of go-to meals, particularly under categories like “I don’t know what to make for dinner” or “I want something different for breakfast.” It truly fits the bill for both scenarios, offering a refreshing departure from the usual suspects. Whether you’re seeking a quick, protein-packed start to your day or a light, flavorful end to a long one, these Black Bean and Egg Tostadas deliver every time. Their inherent flexibility allows them to seamlessly integrate into various meal plans and dietary preferences.
The beauty of these tostadas also lies in their adaptability for meal prepping. After making a batch of seasoned black beans, I typically store any leftovers in an airtight container, ensuring that this delicious meal can be effortlessly recreated for another two or three days. This simple strategy transforms what could be a single meal into a convenient, recurring option that saves time and effort during busy weekdays. Ingredients Spotlight: Building Your Perfect Tostada
Let’s dive a little deeper into the core components that make these Black Bean and Egg Tostadas so special:
- Corn Tortillas: The foundation of our tostada! Corn tortillas offer a rustic flavor and delightful crispness when heated. For best results, use fresh, good quality corn tortillas. You can crisp them in a dry skillet, with a touch of oil, or even quickly in an air fryer for an extra crunchy base.
- Shredded Cheese: A key player in creating that irresistible savory layer. Mexican blend cheese offers a medley of flavors, but sharp cheddar, Monterey Jack, or even a spicy pepper jack would be fantastic. The goal is gooey, melted perfection that binds the beans to the tortilla.
- Black Beans: A powerhouse of plant-based protein and fiber. Canned black beans are a convenient choice; just remember to drain and rinse them thoroughly to remove excess sodium and improve flavor. You can also quickly season them with a pinch of cumin or chili powder before adding to the tostada for an extra layer of depth.
- Egg: The star! A fried egg with a slightly runny yolk adds a luxurious richness that coats every bite. However, feel free to cook your egg to your preference – over easy, over medium, or even scrambled eggs work beautifully.
Elevate Your Tostada with Optional Toppings
The magic of a tostada often lies in its toppings. These optional additions can transform your meal from good to absolutely extraordinary:
- Green and/or Red Salsa: A must for freshness and a kick of flavor. Choose your favorite – mild, medium, or hot – to complement the other ingredients.
- Hot Sauce: For those who crave an extra layer of heat! A dash of your favorite hot sauce can awaken the palate.
- Avocado: Sliced or mashed, avocado adds a creamy texture and healthy monounsaturated fats, balancing the flavors and providing a satisfying richness.
- Cilantro: Freshly chopped cilantro offers a burst of vibrant, herbaceous flavor that brightens the entire dish.
- Other Ideas: Don’t limit yourself! Consider adding a dollop of sour cream or Greek yogurt, a sprinkle of cotija cheese, pickled red onions, a spoonful of corn salsa, or even sautéed bell peppers for added crunch and nutrition.

Black Bean and Egg Tostadas
Yield: serves 1
Total Time: 10 minutes

Ingredients:
- 1 corn tortilla
- 2 tablespoons shredded Mexican blend or cheddar cheese
- 2 tablespoons Bush’s Black Beans, drained and rinsed
- 1 egg
- green and/or red salsa
- hot sauce, optional
- avocado, optional
- cilantro, optional
Directions:
- In a nonstick skillet over medium heat, place your corn tortilla. Heat one side for about 1 minute until lightly warmed, then flip. Immediately add the shredded cheese and drained, rinsed black beans to the tortilla. Continue to cook for 1-2 minutes, or until the tortilla becomes golden and slightly crisp on the bottom, and the cheese has completely melted, creating a delicious base. Carefully slide the prepared tostada base out onto a plate.
- While the tostada base is crisping, or immediately after removing it, lightly spray the same nonstick skillet with cooking spray. Crack your egg into the skillet and cook to your desired doneness. For a perfect runny yolk, cook over easy. If you prefer a firmer yolk, cook over medium or hard. Once cooked to your liking, gently slide the egg out of the skillet and place it directly on top of your cheese and bean-covered tortilla.
- Now comes the fun part – topping your tostada! Generously spoon your favorite green and/or red salsa over the egg and beans. If using, arrange slices of fresh avocado, a few dashes of hot sauce for an extra kick, and a sprinkle of fresh cilantro for a burst of herbaceous flavor. Serve immediately and enjoy your quick, healthy, and incredibly flavorful Black Bean and Egg Tostada!
