This scenario, a classic case of ‘Meal Plan Fail’ in my home, perfectly illustrates how spontaneity can sometimes lead to the most delightful culinary discoveries. The original dinner strategy was straightforward: chicken burgers from Costco sizzling on the grill, accompanied by a fresh salad. A simple, weeknight staple, or so I thought.

However, the moment I mentioned “cheeseburgers” to the kids, a small rebellion brewed. “But you just told Dad CHICKEN burgers on the phone!” they protested. “Wahhhhh, we don’t want CHICKEN burgers!” The familiar plea, echoing through countless households, was unmistakable. My energy reserves for arguing were, admittedly, at an all-time low. Despite the fact they had enjoyed these very chicken burgers before, the current consensus was a firm no. And to be perfectly honest, a chicken burger wasn’t particularly calling to me either at that moment.

Goodness gracious, indeed.

With an immediate pivot, the chicken burger plan was swiftly squashed. My mind, craving something comforting yet light, landed on the idea of a frittata. Meanwhile, the kids were easily appeased with their perennial favorites: scrambled eggs, crisp toast, and a medley of fresh fruit. It’s truly amazing how quickly a potential dinner standoff can transform into a peaceful mealtime when you’re willing to adapt.

And so, that ‘Menu Plan Fail’ unexpectedly blossomed into this:

  5. Cool and Slice: Using an oven mitt (this is crucial, as the skillet handle will be extremely hot!), carefully remove the skillet from the oven. Let the frittata cool in the skillet for a few minutes. This brief cooling period helps it to set further and makes it easier to remove. Slide the frittata onto a cutting board and slice it into quarters or wedges.
