  • 1 cup fresh or frozen (thawed) corn kernels

For the Zesty Cilantro Lime Dressing

  • 1/4 cup of fresh lime juice and white vinegar combined (typically the juice of 12 limes, topped off with white vinegar to reach 1/4 cup)
  • 1/23/4 cup light oil (I often use grapeseed oil for its neutral flavor, but light olive oil, vegetable oil, or canola oil are also excellent choices)
  • 1 medium garlic clove, peeled and roughly chopped
  • 1 tablespoon of honey (adjust to your preferred sweetness)
  • 1 generous bunch of fresh cilantro, stems trimmed
  • Salt and freshly ground black pepper to taste

Instructions

Preparing the Blackened Fish and Assembling the Salad:

  1. Begin by preparing your fish. Pat the fish fillets thoroughly dry with paper towels. This crucial step helps the seasoning adhere better and promotes a superior crust when blackening.   3. Gently turn the fish fillets over using a thin spatula. Continue to cook for another 3-4 minutes, or until the fish is completely cooked through, opaque throughout, and flakes easily with a fork. Remove the fish from the pan and let it rest briefly.
  4. While the fish is cooking or resting, prepare your salad base. In a large bowl, combine the torn romaine lettuce, chopped tomatoes, sliced red onion, sliced jalapeño, chopped avocado, and corn.
  5. To assemble, either flake the cooked fish directly onto the prepared salad or place whole fillets on top. Drizzle generously with the freshly made Cilantro Lime Dressing.
