  • 1 onion, chopped
  • 2 garlic cloves, minced
  • 3 carrots, cut into half-moons
  • 2 celery stalks, chopped
  • 1/2 cup wild rice
  • 4 cups low-sodium chicken broth
  • 1 cup 2% milk
  • 1 cup water
  • 1.5 lbs boneless, skinless chicken breast
  • 1 teaspoon dried thyme
  • 1/2 teaspoon dried parsley
  • 4 oz Colby Jack cheese, shredded

Directions:

  1. Prepare all vegetables: chop the onion, mince the garlic, slice the carrots into half-moons, and chop the celery.
  2. Place all ingredients, except the shredded Colby Jack cheese, into the slow cooker. This includes the chopped onion, minced garlic, sliced carrots, chopped celery, wild rice, chicken broth, milk, water, whole chicken breasts, dried thyme, and dried parsley.
  3. Stir all the ingredients gently to combine them thoroughly in the slow cooker pot.
  4. Cover the slow cooker with its lid and cook on the HIGH setting for 4 hours, or alternatively, cook on the LOW setting for 6 hours. The chicken should be cooked through and tender enough to shred, and the wild rice should be tender.
  5. Once the soup has finished cooking and is hot, carefully remove the cooked chicken breasts from the slow cooker and place them on a cutting board.
  6. Using two forks, shred the chicken into bite-sized pieces. Alternatively, you can cut the chicken into chunks with a knife.
  7. Return the shredded or chunked chicken to the slow cooker and stir it back into the soup.
