Upon arriving in the States, my father quickly established himself, channeling his innate passion and skills into what would become his life’s work: baking. He wasn’t just a baker; he was an artisan, a craftsman who understood the soul of dough and the magic of flour, water, and yeast. Some of my most vivid and cherished childhood memories revolve around his work. Every Sunday, he would take me with him to a bustling bakery in the Bronx. This wasn’t just a trip; it was an immersive experience into the heart of Italian-American culinary tradition.

Picture this: a small, eager child perched on a stool in the middle of a colossal, aromatic kitchen. The air was thick with the scent of rising bread, sweet pastries, and robust espresso. As I nibbled on a fresh-baked cookie, an irresistible treat offered by one of the friendly bakers, I would listen intently. He has always taken exceptionally good care of us, ensuring our well-being and happiness above all else.

His pizzas, especially, are legendary within our family—a perfect blend of crispy crust, savory sauce, and gooey cheese. Rocky’s Ultimate Spinach Pizza

Ingredients:

  • 2 – 3 tablespoons unsalted butter
  • 2 tablespoons all-purpose flour
  • 2 cups half and half (or whole milk for a lighter sauce)
  • A generous pinch of salt
  • Freshly ground black pepper, to taste
  • A delicate pinch of fresh ground nutmeg (the author’s special tweak!)
  • 8 oz frozen chopped spinach, thoroughly thawed and squeezed dry
  • Parmesan Cheese, freshly grated, for an extra layer of flavor
  • Mozzarella Cheese, shredded, for perfect melt and stretch
  • Your favorite pizza dough (homemade or store-bought)

Directions:

To Make the Creamy Spinach White Sauce:

  1. In a medium saucepan, melt 2-3 tablespoons of unsalted butter over medium heat. Ensure the butter is fully melted but not browned.
  2. Stir in 2 tablespoons of all-purpose flour into the melted butter, creating a roux. Cook for 1-2 minutes, stirring constantly, to cook out the raw flour taste. The mixture should be bubbly and light golden.
  3. Gradually whisk in 2 cups of half and half into the butter-flour mixture. Start slowly to avoid lumps, then increase the speed of whisking as the sauce thickens.
  4. Add a dash of salt, freshly ground black pepper, and the delicate pinch of fresh ground nutmeg to the cream sauce. Stir well to combine.
  5. Bring the sauce to a gentle simmer, continuing to stir frequently to prevent it from sticking to the bottom of the pan and burning. Simmer for a few minutes until the sauce starts to noticeably thicken and coats the back of a spoon.
  6. Remove the sauce from the heat and allow it to cool to room temperature. This prevents the spinach from overcooking and helps it integrate smoothly.
  7. Once cooled, gently fold the 8 oz of thoroughly thawed and squeezed dry chopped frozen spinach into the cream sauce. Stir until evenly distributed.

To Prepare and Bake the Pizza:

  1. Preheat your oven to 425 degrees Fahrenheit (220 degrees Celsius). For best results and a crispy crust, place a pizza stone in the oven during preheating, allowing it to get intensely hot.
  2. On a lightly floured surface, stretch or roll out your pizza dough to your desired thickness and shape. Carefully transfer it to a piece of parchment paper or directly onto a preheated pizza peel dusted with semolina flour.
  3. Evenly spread the prepared creamy spinach white sauce over the pizza dough, extending it almost to the edges to create a delicious border.
  4. Generously top the sauce with both shredded Mozzarella cheese and grated Parmesan cheese. Feel free to add more or less according to your preference.
  5. Carefully transfer the pizza to the preheated oven (or onto your hot pizza stone). Bake until the crust is beautifully browned and crisp, and the cheese is melted, bubbly, and golden in spots—typically 12-18 minutes, depending on your oven and crust thickness.
