Ingredients

For the Cumin Chicken:

  • 5 pounds bone-in, skin-on whole chicken, cut into pieces (or boneless, skinless chicken thighs for quicker cooking)
  • 1 teaspoon kosher salt
  • 1 teaspoon freshly ground black pepper
  • 2 teaspoons canola oil (or other high-heat cooking oil)
  • 1 tablespoon whole cumin seeds (Essential for flavor! Toast in a warm, dry skillet until fragrant before mixing with agave for an aromatic boost.)
  • 3 tablespoons agave syrup or high-quality honey

For the Black Bean Stuffing:

  • 1 medium green pasilla chile*
  • 1 medium jalapeño pepper*
  • 4 corn tortillas (6-inch size)
  • 1 can (15 ounces) BUSH’S® Black Beans or BUSH’S® Reduced Sodium Black Beans, thoroughly drained and rinsed
  • ¼ cup chicken stock (low sodium preferred)
  • ¼ teaspoon smoked paprika
  • ¼ teaspoon kosher salt (adjust to taste)
  • ¼ cup fresh cilantro, finely chopped, plus extra for garnish
  • 6 lime wedges, for serving

Additional Supplies:

  • Aluminum foil
  • Grill or grill pan
  • Medium-sized grill-safe pan or cast iron skillet

Instructions

For the Cumin Chicken:

  1. Begin by preparing the chicken. If using a whole chicken, clean the cavity, rinse the chicken thoroughly inside and out with cold water, and pat completely dry with paper towels. Cut the chicken into desired pieces (breasts, thighs, drumsticks). If using boneless, skinless thighs, pat them dry.
  2. Season the chicken pieces generously with kosher salt and freshly ground black pepper, then lightly coat them with canola oil. In a separate small bowl, combine the toasted cumin seeds with the agave syrup (or honey). Set this fragrant mixture aside; it will be used towards the end of cooking.
  3. Preheat your grill: establish a two-zone heat setup. Set one side of your clean, well-oiled grill to medium-high heat and the other side to medium-low heat. Once the grill is hot, use tongs to place the chicken pieces skin-side down (if applicable) on the hot side of the grill. Sear for approximately 5 minutes until beautiful grill marks appear.
  4. Flip the chicken over (skin-side up), then move the pieces to the cooler side of the grill. Close the grill lid and allow the chicken to cook through. Cooking times will vary: approximately 3-5 minutes for breast meat and about 12 minutes for bone-in leg/thigh meat.
  5. During the final two minutes of cooking, generously brush the prepared cumin seed and agave syrup mixture onto both sides of the chicken. Continue to cook for one minute per side, allowing the glaze to caramelize slightly without burning. The chicken is perfectly cooked when its internal temperature reaches 160°F (71°C) at its thickest part.
  6. Carefully remove the chicken from the grill and transfer it to a cutting board. Tent it loosely with aluminum foil and allow it to rest for at least 10 minutes before serving. Resting is crucial as it allows the juices to redistribute, ensuring tender and moist chicken.

For the Black Bean Stuffing:

  1. Prepare the chile and jalapeño peppers: Using metal tongs, blacken the chile and jalapeño peppers directly on the grill (or over a gas burner) for about 3 minutes per side, until the skin is charred. Immediately place the blackened peppers in a small bowl, cover tightly with aluminum foil, and let them steam for 10 minutes. This helps loosen the skin. Once cool enough to handle, gently wipe off the skin (do not rinse, as this removes flavor). Discard the stems and seeds (unless you desire a spicier stuffing). Chop the peppers into ½-inch pieces and set aside.
  2. Prepare the tortillas: Using metal tongs, place the corn tortillas directly on the grill (or a hot, dry skillet) for about 30 seconds per side, until they are slightly charred and pliable. Remove from heat and chop the tortillas into ¾-inch strips.
  3. Assemble and heat the stuffing: In a medium-sized grill-safe pan or cast-iron skillet, combine the drained and rinsed black beans, chopped chile and jalapeño, tortilla strips, chicken stock, smoked paprika, and ¼ teaspoon of kosher salt.
  4. Place the pan directly on the grill (or stove-top burner) over medium heat. Cook, stirring occasionally, just until the mixture comes to a gentle boil and the liquid is mostly absorbed, about 5-7 minutes. Remove the pan from the heat and allow it to cool briefly.
  5. To serve: Arrange the rested Cumin Chicken pieces on serving plates. Spoon a generous portion of the warm Black Bean Stuffing alongside. Garnish with additional fresh cilantro and a couple of lime wedges for a burst of fresh flavor.
