Creamy Zucchini Ricotta Whole Wheat Pasta with Walnuts

Whole Wheat Pasta with Ricotta, Zucchini, and Walnuts: A Modern Twist on a Classic Comfort Dish

There are certain dishes that instantly transport us back to childhood, conjuring up feelings of warmth, comfort, and nostalgia. For me, pasta with creamy ricotta cheese was precisely that dish. It was a staple in our Italian-American household, much like the quintessential mac and cheese is for many families – a true culinary hug in a bowl. Today, I’m thrilled to share a delightful evolution of that beloved classic: a wholesome Whole Wheat Pasta with Ricotta, Zucchini, and Walnuts. This recipe takes the cherished simplicity of my mom’s original and elevates it with fresh, vibrant ingredients and a satisfying crunch.

This particular rendition of a timeless family favorite was crafted in a special partnership with Fisher Nuts, a brand committed to providing quality, preservative-free nuts. It’s a dish I conceived not only to honor the cherished memories of my mom, especially around Mother’s Day, but also to bring a fresh, wholesome perspective to a cherished tradition. It embodies everything I love about home cooking: it’s simple, incredibly flavorful, and brings everyone to the table with a smile.

The Heart of Home Cooking: A Childhood Staple

When I think back to my formative years, certain culinary memories stand out vividly. Amongst them, a simple bowl of pasta swirled with creamy ricotta cheese holds a special place. For those unfamiliar, the concept might sound a tad unconventional, but in our Italian-American household, it was the ultimate expression of comfort. Forget elaborate sauces; this was our equivalent of the classic American mac and cheese – a dish that reliably offered solace, warmth, and the unmistakable taste of home. It was, without a doubt, the definition of comfort food.

My mother possessed an uncanny talent for conjuring up delicious, satisfying dinners with whatever ingredients she had on hand. She was, and still is, the undisputed “Queen of Quick Dinners.” It’s a culinary superpower I’ve proudly inherited, a skill I’ve honed over the years, allowing me to whip up wholesome meals even on the busiest of weeknights. And honestly, I take immense pride in it – a heartfelt thanks to Mom for that invaluable lesson!

Ricotta cheese, it seems, was a permanent fixture in our refrigerator. Its versatility made it a go-to ingredient for countless meals and snacks. We enjoyed it mixed into pasta for a quick and satisfying dinner, savored it simply scooped into a bowl with a sprinkle of sugar as an afternoon treat, and, of course, delighted in it as the luscious filling for cannolis. The memories of its creamy texture and mild flavor were so inspiring that they directly led to me developing recipes like my popular Honey Almond Ricotta Spread, a testament to ricotta’s enduring appeal in my kitchen.

This foundational love for ricotta and straightforward, wholesome cooking is what ultimately inspired this updated pasta dish. It’s a tribute to those simple, yet profound, flavors of childhood, reimagined for today’s busy families.

A Modern Twist: The Addition of Zucchini and Walnuts

The legacy of ricotta love clearly runs in the family! My own daughter shares my enthusiasm for this creamy cheese, especially when it’s generously swirled into pasta – her absolute favorite being pasta with meatballs. It was a heartwarming sight the other night when she, along with my youngest son, enthusiastically devoured this very dish. Witnessing their enjoyment reaffirmed my desire to evolve my mom’s classic, adding a contemporary twist that enhances both flavor and nutritional value.

To achieve this, I decided to introduce some fresh, vibrant elements. Gently sautéed zucchini provides a subtle sweetness and a tender bite, perfectly complementing the creamy ricotta. But the true game-changer, according to my discerning daughter, was the addition of roughly chopped Fisher Walnuts. These earthy, rich nuts aren’t just for flavor; they introduce a fantastic textural contrast with their satisfying crunch and pack a powerful punch of plant-based protein and healthy fats, including omega-3s.

Walnuts, with their distinct earthy notes, harmoniously blend with the mild creaminess of ricotta and the delicate freshness of zucchini. My daughter’s declaration that the walnuts were her favorite part speaks volumes – they truly elevate the dish, adding an unexpected layer of texture and depth of flavor with minimal effort. It’s an ingenious yet simple way to enrich a meal, making it more nutritious and exciting for everyone.

Effortless Elegance for Any Occasion

This Whole Wheat Pasta with Ricotta, Zucchini, and Walnuts is more than just a recipe; it’s a solution for those evenings when culinary inspiration feels distant, but you still crave something wholesome and delicious. It’s the perfect candidate for a stress-free weeknight meal, coming together quickly without demanding extensive thought or complex techniques. Its comforting nature also makes it an ideal dish to prepare for your own mom, perhaps for Mother’s Day, offering a homemade gesture of love and appreciation.

Remember, the key to truly unlocking the flavors in this simple dish lies in proper seasoning. Don’t be shy with coarse salt and freshly ground pepper; they are essential for enhancing the taste of every ingredient. And for a truly authentic Italian touch, a generous snowfall of grated Parmesan cheese is non-negotiable before serving. This dish is not just about eating; it’s about savoring simple, honest flavors and creating new family memories around the dinner table.

Ingredients:

  • 2 cups uncooked whole wheat pasta (I used whole wheat penne)
  • 1 tablespoon olive oil
  • 2 zucchini
  • 1/2 cup Fisher Nut Walnut Halves, roughly chopped
  • 1/2 cup part-skim ricotta
  • big pinch coarse salt and fresh ground pepper
  • Parmesan cheese, for serving

Directions:

  1. Cook pasta according to directions.
  2. While pasta is cooking, heat 1 tablespoon olive oil in a large skillet. Add zucchini to pan and saute for 3-4 minutes. Season well with salt and pepper. Add walnuts and cook for 1-2 minutes longer, frequently stirring. Turn off heat.
  3. When pasta is ready, transfer to skillet using a slotted spoon so that some of the pasta water transfers along with it. (You could also drain pasta in a strainer but set aside a few tablespoons of water first, adding to skillet along with pasta.) Once cooked pasta is skillet, add ricotta to pasta and gently fold into pasta, zucchini and walnuts letting it melt in the heat of the skillet until creamy. Season pasta and ricotta well with salt and pepper. Serve with a generous amount of Parmesan cheese.
