  • 2 acorn squash
  • 1 teaspoon olive oil
  • coarse salt and fresh ground pepper, to taste
  • 1 lb Italian chicken or turkey sausage, removed from casings
  • 2 cups kale, chopped
  • 1/2 cup Fisher Chopped Walnuts
  • 1/2 cup Parmesan cheese, freshly grated

Instructions

  1. Preheat oven to 425 degrees F (220 C). Carefully cut each acorn squash into even halves and remove seeds with a spoon. Place on a baking sheet. Drizzle and brush with olive oil, then sprinkle coarse salt and fresh ground pepper into each half. Place in the oven for 20 minutes, until slightly tender.
  2. While the squash roasts, heat a large nonstick skillet over medium heat. Add the Italian chicken or turkey sausage, removed from its casings, and brown it, breaking it up with a spoon, until cooked through. This typically takes about 7 minutes. Add the chopped kale to the skillet and cook until it wilts, approximately 3-4 minutes. Stir in the Fisher Chopped Walnuts and remove the skillet from the heat.
  3. Carefully remove the roasted acorn squash halves from the oven. Spoon the sausage, kale, and walnut mixture generously into each acorn squash half. Top with freshly grated Parmesan cheese and return to the oven to bake for an additional 10 minutes, or until the cheese is melted and bubbly, and the squash is fully tender.
