  • 1 1/2 lbs tilapia (4-6 fillets)
  • 1 cup sliced or slivered unsalted almonds, finely chopped
  • 3 tablespoons plain dried breadcrumbs (I used panko for extra crispness)
  • 2 tablespoons brown sugar
  • 3/4 teaspoon reduced-sodium Old Bay Seasoning (You can use regular Old Bay and adjust salt in the rest of the recipe accordingly)
  • 1/2 teaspoon kosher salt
  • 1/4 teaspoon ground cinnamon
  • 1/2 teaspoon black pepper
  • 1 large egg
  • 1 tablespoon water
  • 1/4 cup all-purpose flour

Directions:

  1. Preheat your oven to 425 degrees F (220 degrees C). Prepare the tilapia fillets by placing them on a cutting board. If your fillets are large, slice each one down the center where the fish naturally connects to create two smaller, more manageable fillets. This helps with even cooking and portion control. Lightly season both sides of the fish with a pinch of salt and pepper, then set them aside.
  2. Lightly oil a large baking sheet or coat it generously with nonstick cooking spray. This will prevent the fish from sticking and help achieve a golden-brown crust.
