Pesto Chicken Rolls with Chopped Tomato and Spinach Salad

Featuring tender chicken breasts stuffed with vibrant pesto, savory sun-dried tomatoes, and nutty Parmesan cheese, then perfectly seared and baked. - 1.5 lbs boneless, skinless chicken breast: Opt for organic or free-range chicken for the best flavor and quality.
- 6–8 tsp prepared pesto: While store-bought pesto like Buitoni offers a convenient shortcut, feel free to use homemade pesto for an even fresher taste.
- 1 cup sun-dried tomatoes: I prefer the dry-packed ones (not in oil) for less grease, but oil-packed varieties work too. If using dry-packed, you might want to rehydrate them in warm water for 10-15 minutes, then pat dry.
- Shredded Parmesan cheese: Freshly grated Parmesan will melt beautifully and add a superior nutty flavor.
- Salt and pepper to taste: Essential for seasoning the chicken and bringing out all the flavors.
- 1–2 tsps olive oil for pan: A good quality extra virgin olive oil will add flavor and help in searing.
Instructions

- Sear the chicken rolls: Preheat your oven to 375 degrees F (190 degrees C). Heat 1-2 teaspoons of olive oil in an oven-proof skillet (cast iron works wonderfully) over medium-high heat. Once hot, gently place each chicken roll into the pan, making sure not to overcrowd it. Cook each side until it achieves a beautiful golden-brown sear, using tongs to carefully turn the rolls. This searing step locks in moisture and develops a rich, savory crust.
- Finish cooking in the oven: Once all sides of the chicken rolls are nicely seared to a golden brown, transfer the oven-proof skillet directly into the preheated oven. If you don’t have an oven-proof skillet, simply transfer the seared chicken rolls to a baking dish lightly greased with nonstick spray before placing it in the oven. Bake for approximately 20-25 minutes, or until the chicken is completely cooked through and reaches an internal temperature of 165°F (74°C). This recipe typically yields about 6 chicken rolls, perfect for serving 1-2 per person depending on appetite.
- Serve and enjoy: Once cooked, carefully remove the chicken rolls from the oven. If you used toothpicks, remember to remove them before serving.
