Wholesome Chicken Gnocchi Soup

Wholesome & Healthy Chicken Gnocchi Soup: A Family Favorite (Olive Garden Copycat)

There’s nothing quite like a warm, comforting bowl of soup to soothe the soul, especially when battling the sniffles or a pesky cold. A few weeks ago, our household was completely overwhelmed by a particularly stubborn cold virus making its rounds. It was a challenging time with all three children home from school, and then my husband unexpectedly returned from work feeling unwell. As fate would have it, that very evening I was preparing a batch of this Chicken Gnocchi Soup for dinner. The timing, though coincidental, turned out to be absolutely perfect, providing much-needed comfort and nourishment to our entire family.

Despite my deep love for soups (as evidenced by the numerous recipes I share here!), my kids traditionally haven’t been the biggest soup enthusiasts. However, that all changed after an unforgettable visit to Olive Garden. During one of our soup, salad, and breadstick outings, they discovered the magic of Olive Garden’s Chicken Gnocchi Soup. Its rich, creamy texture and tender gnocchi instantly captivated them. From that moment, I knew I had to recreate a version of this beloved soup in our own kitchen. Finding adorable mini gnocchi at the grocery store recently was the sign I needed; it was time to bring this family favorite to life at home.

Crafting a Healthy Chicken Gnocchi Soup: No Half & Half, No Heavy Cream!

The original Olive Garden Chicken Gnocchi Soup is famously known for its creamy, indulgent base, which typically involves heavy cream or half-and-half. While delicious, I wanted to develop a healthier version that didn’t compromise on flavor or texture. My goal was to achieve that comforting creaminess without the added calories and fat from dairy. After some experimentation, I discovered a fantastic secret ingredient: mashed cannellini beans!

This simple substitution proved to be a game-changer. By adding a can of thoroughly mashed cannellini beans to the soup, I was able to create a subtle yet satisfying creamy texture that perfectly mimicked the richness of dairy. What’s even better? No one in my family, not even my discerning 11-year-old who prefers soups without beans or tomatoes (spinach, thankfully, gets a pass!), detected the secret ingredient. The mashed white beans not only added a delightful creaminess but also significantly boosted the soup’s nutritional profile, packing in extra fiber and protein without altering the taste in the slightest.

The success of this recipe was immediate and undeniable. My family adored this soup so much that I ended up making it two weeks in a row! Even my two-year-old happily devoured multiple small bowls. There’s a special kind of joy in having a go-to meal that you know everyone in the family will love and enjoy, and this Chicken Gnocchi Soup has certainly earned its place on that list. It truly warms my heart to see them enjoy such a nutritious and delicious meal.

Ingredients for Your Healthy Chicken Gnocchi Soup

  • 2 tablespoons olive oil
  • 2 celery stalks, chopped
  • 1 onion, chopped
  • 3 garlic cloves, minced
  • 1 – 1.25 lb boneless, skinless chicken breast
  • 4 cups reduced sodium chicken broth
  • 2 cups water
  • 2 carrots, shredded
  • 1 can Bush’s Cannellini Beans, drained and mashed
  • 1/2 teaspoon dried thyme
  • 1/2 teaspoon dried parsley
  • 2 large handfuls fresh spinach, torn
  • 1 package mini gnocchi
  • Salt and freshly ground black pepper, to taste

Step-by-Step Instructions for Making Chicken Gnocchi Soup

  1. Sauté Aromatics: Heat the olive oil over medium heat in a large, heavy-bottomed soup pot or Dutch oven. Add the chopped celery, onion, and minced garlic. Cook, stirring occasionally, until the vegetables are softened and fragrant, which typically takes about 5 minutes. Be careful not to burn the garlic.
  2. Add Chicken and Broth: Place the whole chicken breasts into the pot with the sautéed vegetables. Pour in the reduced-sodium chicken broth and water. Add a generous pinch of salt and freshly ground black pepper. Increase the heat to medium-high and bring the mixture to a slow boil. Let it boil gently for about 5 minutes, then reduce the heat to medium-low to maintain a steady simmer.
  3. Prepare the “Creamy” Element: While the soup simmers, open your can of cannellini beans. Drain off any excess liquid. Using a fork or a potato masher, thoroughly mash the beans in the can (or transfer them to a small bowl if preferred) until they form a smooth puree. Add the mashed beans along with the dried thyme and dried parsley to the simmering soup. Stir well to combine.
  4. Cook the Chicken: Allow the soup to continue simmering for another 15-20 minutes, or until the chicken breasts are fully cooked through and register an internal temperature of 165°F (74°C).
  5. Shred Chicken & Finish Soup: Carefully remove the cooked chicken breasts from the pot and place them on a cutting board. Let them cool for just a minute or two, then slice and chop the chicken into small, bite-sized pieces. Return the chopped chicken to the soup. At this point, add the fresh spinach and the entire package of mini gnocchi. Stir everything together. Season with additional salt and pepper to your taste.
  6. Serve & Enjoy: Let the soup cook for another 5 minutes, or until the gnocchi are tender and cooked through (they will float to the surface when done) and the spinach has wilted. Taste and adjust the seasoning as needed. Serve hot and enjoy your homemade, healthy Chicken Gnocchi Soup!

Tips for Enhancing Your Healthy Chicken Gnocchi Soup

This recipe is incredibly forgiving and adaptable. Here are a few suggestions to make it even more your own:

  • Vary the Veggies: Feel free to add other vegetables like diced zucchini, bell peppers, or even a handful of chopped kale for extra nutrition and color. Add them with the carrots to ensure they cook through.
  • Spice it Up: A pinch of red pepper flakes can add a subtle kick if you enjoy a bit of heat in your soup.
  • Fresh Herbs: While dried herbs work wonderfully, fresh thyme or parsley, added at the very end, can elevate the flavors even further.
  • Cheese Garnish: For those who don’t mind a little dairy, a sprinkle of fresh Parmesan cheese on top of each serving makes a delightful garnish.
  • Make it Vegetarian: Omit the chicken and use vegetable broth for a delicious vegetarian version. You could add extra beans or some hearty mushrooms for more substance.
  • Storage & Leftovers: This soup stores well in an airtight container in the refrigerator for up to 3-4 days. It’s perfect for meal prepping! Note that gnocchi can absorb a lot of liquid and may swell over time, so you might need to add a splash more broth or water when reheating.
